- Communication - Keep lines of communication open between you, the BK management team, executive management team, retail bakery management, and support management team.
- Financial responsibility- Understand and own pricing of product, staffing levels and labor cost, overall P+L. Set realistic goals with Culinary Director, meet with production managers and CD on labor and food costs. Be the main point of financial contact for the controller and executive management team. Maintain a working daily knowledge of the standard and protocols of Crunchtime and the impact on the financial success of BK and the relationship with the bakeries.
- Operational efficiency- Ensure we are operating as efficiently as we can be in terms of space usage, flow, and packing.
- Grow sales- Drive revenue streams in the bakeries by fostering a “yes” environment at BK and supporting the pastry, savory, support, and logistics teams in executing higher volume orders from bakeries and special events.
- Product quality- Establish systems to ensure we are producing products to the quality level we require. Maintain a system to ensure the product is being tasted constantly.
- Physical plant - Own the physical plant of BK.
- Work directly with bakeries on any billing inquiries
- Manage standardization and maintenance of all BK SOPs
- Logistics/delivery:
- Manage the Logistics and Driving Coordinator
- Help set up and maintain our delivery schedule, maximize our efficiency in production and packaging and delivery
- Cover/manage the logistics team when the LDC is off or away
- Establish relationships with bakery managers- Visit bakeries regularly to understand issues with delivery and to ensure quality of product at bakeries.
- Purchasing- purchase and maintain budget for smallwares, specialty ingredients, and paper goods for both the kitchen and bakeries
- Maintain and foster relationships with property management and neighbors to ensure open communication about all things happening in the building that impact the kitchen
- At least three years of management experience in a commercial food production facility preferred
- Open to feedback and committed to continuous improvement
